Preparation
  1. Preheat your oven to 325°F (165°C).
  2. Season the beef chuck roast with salt and pepper on all sides.
  3. Slice the onions thinly, preparing them for sautéing.
  4. Prep garlic by mincing it finely.
Cooking
  1. In a large oven-safe pot, heat oil over medium heat and add sliced onions.
  2. Sauté the onions until they are caramelized, about 15-20 minutes.
  3. Add minced garlic and cook for an additional minute.
  4. Place the seasoned beef roast into the pot, on top of the caramelized onions.
  5. Pour in beef broth and sprinkle thyme over the top.
  6. Cover the pot and transfer it to the oven.
  7. Cook the pot roast for approximately 3-4 hours, or until the beef is fork-tender.
Serving
  1. Once cooked, remove the pot from the oven and let it rest for about 10 minutes.
  2. Slice or shred the beef as desired and serve it over the caramelized onions.
