  1. Combine strawberries and sugar in a medium-sized pot or saucepan, gently stirring to coat the strawberries in sugar.
  2. Whisk together lemon juice, vanilla extract, and cornstarch in a small bowl until fully smooth and lump-free.
  3. Pour the mixture over strawberries and stir well, ensuring all strawberries are coated.
Cooking
  1. Bring to a boil over medium-high heat, then reduce to medium heat and simmer.
  2. Keep an eye on it as the sauce heats, allowing the berries to soften and juices to thicken slightly.
  3. Cook for about 5 minutes for a chunky consistency, or adjust time depending on your preferred thickness.
  4. Enjoy warm, at room temperature, or chilled!

Notes

For a smoother sauce, blend the mixture after cooking. Incorporate different flavors by adding a splash of orange juice or some chopped fresh mint. Make it ahead and store it in the refrigerator for up to a week.
