Ingredients
  

Mashed Potato Mixture
  • 2 cups Mashed Potatoes Use leftovers or freshly made.
  • 1 cup Cheese (Cheddar or Mozzarella) Can use different cheeses for variation.
  • 4 tbsp Green Onions, chopped Shallots or chives can be substituted.
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
  • 1/2 cup All-Purpose Flour Cornstarch is a gluten-free substitute.
  • 2 pcs Eggs, beaten Flax eggs can be used for an egg-free version.
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Oil for frying Neutral oil with a high smoke point Canola or vegetable oil is best.

Method
 

Preparation
  1. In a bowl, mix the mashed potatoes, cheese, green onions, salt, and pepper until well combined.
  2. Shape the mixture into small balls and then roll each ball in flour, dip in beaten eggs, and coat with breadcrumbs.
Cooking
  1. Heat oil in a deep frying pan over medium heat.
  2. Carefully add the potato balls to the hot oil and fry until golden brown and crispy, about 4-5 minutes.
  3. Remove from oil and drain on paper towels.
  4. Serve warm and enjoy!

Notes

Avoid too much liquid in the mashed potatoes, and ensure they are cooled before mixing to hold together better. Fry in batches to avoid overcrowding.
