  • 1/2 teaspoon Black Pepper Fresh-ground preferred.
  • 1/4 teaspoon Garlic Powder Adjust for more flavor as desired.
  • 3 whole Eggs, beaten Can use a flax egg for a vegan option.
  • 1 3/4 cups Panko Breadcrumbs For perfect crunch; regular breadcrumbs work but texture differs.
  • Oil for frying Oil for Frying Use oil with a high smoke point, like peanut or canola.
For serving
  • Lemon Wedges Brightens up the dish.
  • Parsley Fresh or dried for garnish.
  • Cocktail Sauce Homemade preferred, store-bought works too.

Method
 

Preparation
  1. Place the flour in a medium-size bowl and mix in the salt, pepper, and garlic powder.
  2. In a second bowl, beat the eggs.
  3. Place the panko breadcrumbs in a third bowl.
  4. Dip each shrimp first into the flour, then into the egg, then roll in the breadcrumbs to coat evenly. Place on a sheet pan.
Cooking
  1. Heat 3 inches of oil in a large pot to 350 degrees F.
  2. Fry 6 shrimp at a time for 3-4 minutes or until golden brown. Drain on paper towels.
Serving
  1. Serve the shrimp immediately with cocktail sauce and garnish with lemon wedges and parsley.
