Ingredients
  

Base Ingredients
  • 1 lb Ground Beef Can substitute with ground turkey.
  • 1 medium Onion Can swap for shallots.
  • 2 cloves Garlic Can use garlic powder if fresh is unavailable.
Chili Ingredients
  • 1 can Kidney Beans Black beans can be used as a substitute.
  • 2 tbsp Tomato Paste Crushed tomatoes can work in a pinch.
  • 1 can Rotel (Diced tomatoes with green chiles) Regular diced tomatoes are acceptable.
  • 1 tbsp Chili Powder Use fresh for the best flavor.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Sugar Can replace with a pinch of honey.
  • 1 tsp Cumin Ground coriander can be used as an alternative.
Toppings
  • 1 bag Fritos
  • 1 cup Shredded Cheddar Cheese Optional topping.

Method
 

Preparation
  1. In a large skillet or pot, brown the ground beef, onion, and garlic on medium heat. Drain off excess fat.
  2. Stir in kidney beans, tomato paste, Rotel, chili powder, salt, sugar, and cumin to the ground beef. Mix well.
  3. Lower the heat to medium-low and allow the mixture to simmer uncovered for 20 minutes.
Serving
  1. Pour a bag of Fritos onto a serving dish or into individual bowls. Serve the chili over the Fritos, sprinkle with shredded cheddar cheese, and top with your desired toppings.

Notes

Serve with a variety of toppings for customization. Store leftovers in an airtight container in the refrigerator for up to three days. You can freeze the chili without the Fritos for up to three months.
