Preparation
- In a large skillet or pot, brown the ground beef, onion, and garlic on medium heat. Drain off excess fat.
- Stir in kidney beans, tomato paste, Rotel, chili powder, salt, sugar, and cumin to the ground beef. Mix well.
- Lower the heat to medium-low and allow the mixture to simmer uncovered for 20 minutes.
Serving
- Pour a bag of Fritos onto a serving dish or into individual bowls. Serve the chili over the Fritos, sprinkle with shredded cheddar cheese, and top with your desired toppings.
Notes
Serve with a variety of toppings for customization. Store leftovers in an airtight container in the refrigerator for up to three days. You can freeze the chili without the Fritos for up to three months.
