Ingredients
  

Granola Base
  • 2 cups Old fashion rolled oats Provides a hearty, fibrous base.
  • 1/2 cup Nut butter Adds creaminess and healthy fats.
  • 1/3 cup Maple syrup or honey Natural sweetener to enhance flavor.
  • 1 teaspoon Pure vanilla extract For added depth and sweetness.
  • 1/2 teaspoon Cinnamon Offers a warm, comforting spice note.
  • 1/4 teaspoon Salt Balances sweetness and enhances flavors.
Topping
  • 2 cups Vanilla yogurt or skyr Creamy topping that binds everything together.
  • 1 cup Fresh strawberries Adds sweetness and freshness.
  • 1 cup Fresh blueberries Provides a burst of flavor and color.
  • 1 cup Fresh raspberries or blackberries Optional for extra berry goodness.

Method
 

Preparation
  1. Line an 8x8” or 9x9” baking dish with parchment paper and set it aside.
Making the Granola Base
  1. In a large mixing bowl, combine all the granola base ingredients and mix with a spatula.
  2. Add the oat mixture to the lined baking dish and use a spatula to firmly press and spread it in an even layer across the bottom of the dish.
Assembling
  1. Spread the vanilla yogurt or skyr across the granola base in an even layer.
  2. Top with the strawberries, blueberries, raspberries, and/or blackberries.
Freezing
  1. Place in the freezer for at least 2 hours to set, until the yogurt is solid.
  2. Remove from the freezer and cut into squares. Enjoy cold and store leftovers in the freezer.

Notes

These bars can be customized with seasonal fruits or favorite toppings. Ensure to pack the granola mixture tightly for better shape retention.
