Preparation
  1. In a slow cooker, pour in 1 tablespoon of olive oil and add 1 pound of beef and 2 cups of diced potatoes.
  2. Pour 1 cup of beef broth over the mixture and then add 4 tablespoons of garlic butter, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of dried thyme.
  3. Gently stir everything together until well combined.
  4. Cover and cook on low for 6-8 hours or on high for 4-6 hours until the beef is tender.
