- Bring a large pot of salted water to a boil.
- Once boiling, add the cauliflower florets and simmer for about 10-12 minutes, or until tender.
- After cooking, drain the cauliflower well and return it to the pot.
- Allow any excess water to evaporate for a better texture.
- In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant and lightly golden.
- Pour the garlic butter mixture and cream cheese (or sour cream) into the pot with the cauliflower.
- Using a potato masher or an immersion blender, mash the cauliflower until smooth.
- After mashing, season with salt and pepper to taste.
- Serve the Garlic Butter Mashed Cauliflower warm, garnished with chopped parsley if desired.
Notes
Avoid overcooking the cauliflower to prevent watery mash. Skipping the garlic can result in bland flavors, so be generous with it for maximum impact. For variety, try using Greek yogurt instead of cream cheese.
