Preparation
  1. In a large pot, add the quartered potatoes and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  3. While the potatoes are cooking, prepare the garlic by wrapping the cloves in aluminum foil and baking at 400°F for 20-25 minutes until soft and caramelized.
  4. Drain the potatoes and return them to the pot. Add the roasted garlic, butter, and heavy cream.
  5. Using a potato masher or ricer, mash the potatoes until smooth and creamy.
  6. Season with salt and black pepper to taste, mixing well to combine.
  7. Serve warm, garnished with a sprinkle of fresh herbs if desired.
