- Preheat the oven to 350°F (175°C) and prepare your loaf pan by spraying it with nonstick cooking spray.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced onion, minced garlic, egg, milk, chopped parsley, salt, and pepper.
- Shape the meat mixture into a loaf and place it in the prepared loaf pan.
- Sprinkle the top with shredded Parmesan cheese and additional chopped parsley.
- Bake in the oven for 1 hour. For the last two minutes, switch to broil to achieve a golden crust.
Notes
Avoid overmixing to prevent tough texture. Store leftovers in an airtight container for up to 3-4 days, or freeze for up to 3 months.
