Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, parsley, onion, egg, salt, pepper, and milk. Mix until well combined, but do not overmix.
  3. Transfer the mixture to a greased loaf pan. Shape it into a loaf, smoothing the top.
Cooking
  1. Place the loaf pan in the preheated oven and bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  2. Once out of the oven, let the meatloaf rest for 10 minutes before slicing.

Notes

Consider using whole-grain breadcrumbs for added fiber or swap ground chicken for ground turkey. Leftovers are great in sandwiches.
