Ingredients
  

Dry Ingredients
  • 3 cups All-purpose flour Can substitute with gluten-free blend.
  • 1 teaspoon Baking soda Helps the cookies rise.
  • 2 teaspoons Ground ginger Can substitute with fresh ginger.
  • 2 teaspoons Ground cinnamon Nutmeg can be used as an alternative.
  • 1 teaspoon Salt Balances the sweetness.
Wet Ingredients
  • 1 cup Unsalted butter Can use margarine if needed.
  • 1 cup Brown sugar White sugar can be an alternative.
  • 1/2 cup Molasses Gives cookies their signature flavor.
  • 1 large Egg Can be replaced with flaxseed meal mixed with water for a vegan version.

Method
 

Preparation
  1. Preheat oven to 350 degrees F.
  2. Mix together butter and sugar until light and fluffy, approximately 2-3 minutes.
  3. Add egg and molasses and mix well.
  4. In a separate bowl, combine flour, baking soda, salt, cinnamon, and ginger.
  5. Add dry ingredients to wet ingredients and mix until well combined.
  6. Form or scoop balls of dough slightly smaller than a golf ball. Roll in granulated sugar if desired.
  7. Place dough balls on a baking sheet approximately 2” to 3” apart.
Baking
  1. Bake for 10-12 minutes.
  2. Remove from oven and let cool on baking sheet for about ten minutes.
  3. Transfer to a wire rack to finish cooling.

Notes

Serve warm or allow to cool completely. These cookies can be decorated with icing, candies, and sprinkles. Keep an eye on baking time to avoid over-baking.
