Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) to prepare for baking.
  2. Grease a 4x8 inch loaf pan to ensure easy release after baking.
  3. In a mixing bowl, blend the melted butter with the mashed bananas until well combined.
  4. Sprinkle in the baking soda and a pinch of salt, mixing to combine.
  5. Fold in the sugar, beaten egg, and vanilla extract until well mixed.
  6. Gently stir in the gluten-free flour until just incorporated.
  7. If desired, fold in chocolate chips and walnuts for added texture.
  8. Transfer the batter into the prepared loaf pan, spreading it evenly.
Baking
  1. Place the pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, wrap in plastic wrap and store in the refrigerator. Can be frozen in slices.
