Preparation
- Preheat the oven to 350°F (175°C) to prepare for baking.
- Grease a 4x8 inch loaf pan to ensure easy release after baking.
- In a mixing bowl, blend the melted butter with the mashed bananas until well combined.
- Sprinkle in the baking soda and a pinch of salt, mixing to combine.
- Fold in the sugar, beaten egg, and vanilla extract until well mixed.
- Gently stir in the gluten-free flour until just incorporated.
- If desired, fold in chocolate chips and walnuts for added texture.
- Transfer the batter into the prepared loaf pan, spreading it evenly.
Baking
- Place the pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, wrap in plastic wrap and store in the refrigerator. Can be frozen in slices.
