Method
 

Preparation
  1. In a deep pan over medium-high heat, warm the olive oil until shimmering.
  2. Add the chicken breast, seasoning with salt, pepper, and garlic powder. Cook until golden brown and fully cooked through.
  3. Pour in the chicken broth, using a spatula to scrape up any browned bits from the bottom of the pan.
  4. Stir in the fresh gnocchi and cook for about 3-4 minutes, stirring frequently until they float and are tender.
Combining and Serving
  1. Reduce the heat to very low, allowing the gnocchi to absorb the liquid while adding extra broth if needed to prevent drying.
  2. In a small bowl, whisk together the eggs, Parmesan, salt, and pepper until smooth.
  3. Gradually pour the egg mixture over the gnocchi while stirring continuously until creamy and well combined.
  4. Remove from heat, sprinkle with more Parmesan cheese, and enjoy your comforting dish right away.
  5. Place any leftover gnocchi in an airtight container and refrigerate for up to 3 days.

Notes

To enhance the flavors, consider using homemade chicken stock for a richer taste. If you like heat, add a pinch of red pepper flakes when cooking the chicken. Store leftovers properly for best flavor and texture.
