For the chicken

Preparation
  1. Preheat your oven to 425°F.
  2. Heat a cast iron skillet over medium-high heat.
  3. In a small bowl, mash the goat cheese until it is smooth.
  4. Stir in the finely chopped pepperoncini and thyme; season the mixture with salt and pepper to taste.
  5. Using a sharp knife, cut a slit into the thick side of each chicken breast to create a pocket.
  6. Stuff each pocket with about 2 tablespoons of the goat cheese mixture.
  7. Pat the chicken dry and season both sides generously with salt and pepper.
Cooking
  1. Place the chicken skin-side down in the skillet and cook for about 5 minutes until golden.
  2. Transfer the skillet to the preheated oven and bake until the chicken is cooked through, approximately 18 to 20 minutes.
  3. Ensure doneness by checking the internal temperature reaches 165°F.
  4. Remove the skillet from the oven, flip the chicken over, and allow it to rest for 3 minutes before serving.
  5. Garnish with fresh thyme if desired.

Notes

Overloading the stuffing can lead to spillage, so be conservative with how much goat cheese mixture you use. Letting the chicken rest is crucial for juiciness.
