Ingredients
Method
Preparation
- Marinate the chicken breasts in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
- While the chicken is marinating, prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, dill, and lemon juice.
- Chop the fresh veggies (cucumber, tomatoes, red onion) and set aside.
Cooking
- Grill or bake the marinated chicken until fully cooked.
- Slice the cooked chicken.
Assembly
- Assemble the bowls with sliced chicken, chopped veggies, feta cheese, and olives.
- Drizzle with tzatziki sauce and serve.
Notes
Prepare the marinade the night before to save time; this makes the chicken even more flavorful. Leftovers can be stored in airtight containers, and the tzatziki should be kept separate until ready to serve. Greek Chicken Bowls can last in the fridge for about 3-4 days.
