Ingredients
  

For the Marinade and Chicken

  • 1/4 cup Lemon juice Brightens the dish; lime juice is a great substitute.

  • 1/2 teaspoon Pepper Essential seasoning; adjust to taste.
For Assembly
  • 1 cup Cucumber Refreshing crunch; zucchini can be used for a different texture.
  • 1 cup Tomatoes Juicy sweetness; cherry tomatoes also work well here.
  • 1 medium Red onion Adds zing; shallots provide a milder alternative.
  • 1/2 cup Feta cheese Creamy tang; goat cheese works beautifully if you prefer an alternate flavor.
  • 1/4 cup Kalamata olives Salty, rich flavor; green olives can also be a good fit.
  • 1/2 cup Tzatziki sauce Cool and creamy; buy pre-made or make your own using yogurt, grated cucumber, garlic, dill, and lemon juice.

Method
 

Preparation
  1. Marinate the chicken breasts in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. While the chicken is marinating, prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, dill, and lemon juice.
  3. Chop the fresh veggies (cucumber, tomatoes, red onion) and set aside.
Cooking
  1. Grill or bake the marinated chicken until fully cooked.
  2. Slice the cooked chicken.
Assembly
  1. Assemble the bowls with sliced chicken, chopped veggies, feta cheese, and olives.
  2. Drizzle with tzatziki sauce and serve.

Notes

Prepare the marinade the night before to save time; this makes the chicken even more flavorful. Leftovers can be stored in airtight containers, and the tzatziki should be kept separate until ready to serve. Greek Chicken Bowls can last in the fridge for about 3-4 days.
