For the lamb patties

For assembly
  • 6 pieces Brioche hamburger buns Soft and buttery, ideal for holding the juicy patties.

Method
 

Preparation
  1. Bring the lamb to room temperature by taking it out of the fridge 20-30 minutes before grilling.
  2. Chop fresh herbs and combine with paprika, cayenne, cumin, and golden raisins in a bowl.
  3. Mix the lamb and herb combination gently with your hands, being careful not to overwork the meat. Do not add any salt at this point.
Cooking
  1. Preheat your grill to medium-high and allow it to preheat for 5-10 minutes.
  2. Divide the meat into 6 equal portions and form round patties, pressing a slight indent into each.
  3. Just before grilling, generously sprinkle both sides of the patties with salt and pepper.
  4. Place the patties on the preheated grill, close the lid, and cook for 5 minutes.
  5. Flip the patties to the other side and continue grilling for an additional 5 minutes for medium/medium rare.
  6. With 1-2 minutes left of grill time, add a few slices of feta cheese on top of each burger to melt.
  7. Remove the burgers from the grill and transfer them to a foil-lined baking sheet, loosely covering them with foil to rest for 5 minutes before serving.

Notes

Let the ground lamb come to room temperature before mixing and grilling for even cooking. Allow the burgers to rest after cooking to retain juices. Adjust seasoning and spice mix to preference.
