Preparation
  1. Gather all ingredients.
  2. Rinse and roughly chop fresh spinach.
  3. Crumble feta cheese into a bowl.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Add the chopped spinach and cook until wilted, about 2 minutes.
  3. Whisk eggs in a bowl and pour them into the skillet.
  4. Add crumbled feta cheese and stir gently.
  5. Cook until eggs are just set, 3–4 minutes, stirring occasionally.
Serving
  1. Remove the skillet from heat.
  2. Season with black pepper and additional fresh herbs, if using.
  3. Serve hot, accompanied by your favorite sides.

Notes

For the best results, use fresh eggs and cook on low heat for softer eggs. Store leftovers in an airtight container for up to 3 days.
