Method
 

Preparation
  1. Preheat your cooking surface: prepare a grill, grill pan, or skillet over medium heat.
  2. In a large bowl, mix together the ground turkey, breadcrumbs, Feta, olives, parsley, lemon juice, oregano, garlic, egg, salt, and pepper until thoroughly combined.
  3. Divide the mixture into four equal portions and shape each portion into a patty.
  4. Spray your cooking surface with nonstick spray to prevent sticking.
Cooking
  1. Place the shaped patties onto the hot grill or pan, cooking until they reach an internal temperature of 165°F, about 5-7 minutes per side.
  2. In a medium bowl, combine the squeezed cucumber, Greek yogurt, lemon juice, minced parsley, salt, and garlic for the tzatziki sauce, mixing until well-blended.
Assembly
  1. Place each turkey patty on a bun, layering with cucumber, tomato, red onion, and lettuce, and drizzling with tzatziki sauce.
  2. Optionally, add extra parsley on top for a beautiful finish.
