  • 1 cup Graham cracker crumbs Creates a crunchy base

Method
 

Preparation
  1. In a bowl, combine the graham cracker crumbs and melted butter. Mix until crumbly.
  2. Press the mixture evenly into the bottom of a springform pan to form the crust.
  3. In a separate mixing bowl, blend the Greek yogurt, cream cheese, granulated sugar, vanilla extract, and lemon zest until smooth.
Chilling
  1. Pour the cheesecake filling over the crust in the springform pan.
  2. Smooth the top with a spatula for an even finish.
  3. Cover and refrigerate for at least 4 hours, or until set.
Serving
  1. Once set, remove the cheesecake from the refrigerator.
  2. Carefully release the springform pan.
  3. Slice and serve chilled, garnished with your favorite toppings if desired.

Notes

Refrigerate overnight for a firmer cheesecake. Use room temperature cream cheese for easier mixing. Garnish with fresh fruit or fruit compote for added flavor.
