Preparation
- Husk the tomatillos and rinse them under cold water to remove sticky residue.
- Chop the jalapeño, onion, and cilantro.
- Peel and mince the garlic cloves.
Cooking
- In a saucepan, boil water and add the tomatillos. Cook until soft, about 10 minutes.
- In a blender, combine the boiled tomatillos, chopped jalapeño, cilantro, lime juice, garlic, onion, and vegetable broth.
- Blend until smooth and creamy.
Serving
- Return the blended sauce to the saucepan and heat over medium heat.
- Simmer for about 5 minutes to meld flavors and thicken slightly.
- Serve immediately, or let cool before storing.
Notes
For a spicier sauce, keep the seeds in the jalapeño. Blend thoroughly for a smooth texture. Store leftovers in an airtight container for freshness. Can be made ahead of time and stored in the fridge for up to a week.
