  • 6 medium Tomatillos Husked and rinsed
  • 1 medium Jalapeño Chopped, for heat
  • 1/2 cup Cilantro Chopped, for freshness
  • 1 Juice Lime For brightness
  • 2 cloves Garlic Peeled and minced
  • 1 medium Onion Chopped, for sweetness
  • 1 cup Vegetable broth For sauce consistency

Method
 

Preparation
  1. Husk the tomatillos and rinse them under cold water to remove sticky residue.
  2. Chop the jalapeño, onion, and cilantro.
  3. Peel and mince the garlic cloves.
Cooking
  1. In a saucepan, boil water and add the tomatillos. Cook until soft, about 10 minutes.
  2. In a blender, combine the boiled tomatillos, chopped jalapeño, cilantro, lime juice, garlic, onion, and vegetable broth.
  3. Blend until smooth and creamy.
Serving
  1. Return the blended sauce to the saucepan and heat over medium heat.
  2. Simmer for about 5 minutes to meld flavors and thicken slightly.
  3. Serve immediately, or let cool before storing.

Notes

For a spicier sauce, keep the seeds in the jalapeño. Blend thoroughly for a smooth texture. Store leftovers in an airtight container for freshness. Can be made ahead of time and stored in the fridge for up to a week.
