Method
 

Preparation
  1. Preheat the grill over medium to medium-high heat for 5-10 minutes until hot.
  2. Slice the peppers in half, removing the stems, seeds, and pith. Brush both sides lightly with olive oil.
Grilling
  1. Place the peppers cut side down on the grill and grill undisturbed with the lid closed on medium heat for 4-5 minutes.
  2. Flip the peppers and grill the other side with the lid closed for an additional 4-5 minutes.
Serving
  1. Transfer to a plate and sprinkle both sides with sea salt and freshly ground black pepper. Drizzle with aged balsamic or chimichurri if desired.

Notes

For best results, preheat the grill sufficiently and avoid overcrowding it. Consider marinating the peppers in olive oil with herbs for added flavor.
