Ingredients

For the Chicken
  • 6 pieces boneless, skinless chicken thighs Tender and juicy choice for grilling.
For the Marinade
  • cup bourbon whiskey Adds depth and richness; can substitute with apple juice for a non-alcoholic version.
  • 1 cup brown sugar Enhances caramelization and flavor; use coconut sugar for a less refined option.
  • ¼ cup apple cider vinegar Balances sweetness with acidity; lemon juice works as an alternative.
  • ¼ cup Worcestershire sauce Infuses umami; reduces pantry waste by repurposing other marinades.
  • 3 cloves garlic, minced Boosts flavor; feel free to add more for garlic lovers!
  • Salt and pepper to taste Adjust for personal preference; consider using a flavored salt for added nuance.

Method

Preparation
  1. In a medium bowl, whisk together the bourbon, brown sugar, apple cider vinegar, Worcestershire sauce, minced garlic, salt, and pepper to create the marinade.
  2. Pour the marinade into a sealable bag, add the chicken thighs, and seal it shut. Marinate for at least an hour, preferably overnight.
  3. Preheat the grill to 400 degrees Fahrenheit.
Cooking
  1. Remove the chicken from the marinade and discard the marinade. Brush the grill grates with oil to prevent sticking.
  2. Grill the chicken thighs for about 3-4 minutes per side, ensuring an internal temperature of 165 degrees Fahrenheit.
  3. Once cooked, let the chicken rest on a clean plate for at least 5 minutes before serving.

Notes

Skip the marination time, and you'll miss an intensified flavor; be patient and let the chicken rest to lock in juices. Prepare extra chicken for meal prep throughout the week or have fun experimenting with additional herbs in the marinade like rosemary or ginger.
