Preparation
- Prepare the brine. Add water, kosher salt, and granulated sugar to a large bowl and stir until dissolved. Place chicken wings in the brine, ensuring they are covered. Cover and refrigerate for 30 minutes.
Cooking
- Preheat the grill. Set up for indirect cooking at 375°F.
- Remove wings from brine, discard brine, and pat wings dry.
- Coat the wings. In a small bowl, whisk together oil, salt, pepper, and granulated garlic; coat wings with this mixture. Wipe grill grates with oil.
- Grill the wings. Grill wings for approximately 45 minutes, flipping halfway through.
- Prepare the Buffalo Sauce. Combine all sauce ingredients in a small saucepan over medium heat; bring to a simmer. Remove from heat and keep warm.
- Toss in sauce. Toss grilled wings in the Buffalo Sauce until well coated. Garnish with chopped parsley and serve with carrots, celery, and dressing options.
Notes
For optimal flavor and texture, consider brining wings for a few hours, avoid overcrowding the grill, use a meat thermometer for safety, allow wings to rest after grilling, and experiment with the sauce to suit your heat preference.
