Preparation
  1. Preheat your grill to medium heat, ensuring it is well-oiled and ready for the chicken.
  2. Sprinkle the chicken breasts generously with salt, pepper, and garlic powder on both sides.
Cooking
  1. Place the seasoned chicken on the grill and cook for approximately 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  2. Spread basil pesto on each chicken breast and top with slices of fresh mozzarella during the last 2-3 minutes of grilling to melt the cheese.
Serving
  1. Once cooked, remove the chicken from the grill and let it rest for about 5 minutes to retain juiciness.
  2. Just before serving, drizzle balsamic reduction over the chicken for an extra touch of flavor.
