For the Skewers
  • 1 pound chicken breasts Lean protein source.

Method
 

Preparation
  1. Prepare the marinade by whisking together all marinade ingredients in a medium bowl.
  2. Marinate the chicken by placing chopped chicken into a large mixing bowl and pouring the marinade over it. Stir to combine, cover, and refrigerate overnight, stirring once or twice; for best results, aim for at least 8 hours.
  3. Skewer the marinated chicken alternating with the sliced veggies to create vibrant kabobs.
  4. Preheat the grill to medium-high heat, about 400°F (200°C).
Grilling
  1. Grill the kabobs over medium-high heat for about 10 minutes, rotating every 2-3 minutes for even grilling and a nicely charred exterior.
  2. Remove the kabobs from the grill and let them rest for at least 5 minutes before serving. Garnish with parsley and enjoy!

Notes

For best results, use fresh ingredients, preheat the grill, and soak wooden skewers in water for 30 minutes to prevent burning. Experiment with different veggies and marinades for variety.
