Ingredients

Main Ingredients
  • 4 pieces thin boneless skinless chicken breasts Lean protein source; try to choose organic or free-range for the best flavor.
  • 2 teaspoons olive oil or avocado oil Adds moisture and healthy fats; both oils are great for high-heat cooking.
  • 2 teaspoons chili powder Adds a mild heat; feel free to adjust based on your spice preference.
  • to taste Salt Enhances all other flavors; kosher or sea salt work best for seasoning.
Salsa Ingredients
  • 1 cup diced mango Provides sweetness and a tropical flair; use ripe mango for the best texture.
  • 1 cup diced avocado Adds creaminess and healthy fats; choose ripe but firm avocados.
  • 1 lime, juiced Brightens flavors; freshly squeezed juice is always best.
  • 1/2 cup minced red bell pepper Adds crunch and sweetness; a colorful addition to the salsa.
  • 1/4 cup chopped cilantro Provides a fresh herbal note; fresh cilantro pairs perfectly with the mango.

Method

Preparation
  1. In a bowl, combine the diced mango, diced avocado, minced red bell pepper, and chopped cilantro. Stir in the lime juice and salt to taste. Set aside to let the flavors blend.
Cooking
  1. Preheat your grill to medium-high heat. Drizzle olive oil over the chicken breasts and sprinkle them with chili powder and salt. Grill the chicken for 4 to 5 minutes on each side or until fully cooked through (internal temperature should reach 165°F / 74°C).
Serving
  1. Once the chicken is grilled to perfection, spoon the mango avocado salsa generously over each breast and serve immediately.

Notes

Not letting the chicken rest before slicing can lead to dryness. Always allow the chicken to rest for a few minutes after grilling for juicier results. This dish is perfect for meal prep; just keep the salsa separate to maintain freshness until serving.
