Taco assembly ingredients
  • 4 small tortillas Whole wheat or corn tortillas for a healthier option.

  • 1/4 cup red onion, thinly sliced Green onions can be a milder switch.
  • 1/4 cup feta cheese, crumbled Try goat cheese for a tangy alternative.

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, dried oregano, garlic powder, paprika, salt, and pepper to create the marinade.
  3. Coat the chicken breasts with the marinade and let sit for 15-30 minutes.
Cooking
  1. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  2. Remove from the grill and let rest for a few minutes before slicing.
  3. Warm the tortillas on the grill for about 30 seconds on each side.
Assembly
  1. Place sliced chicken in each tortilla and top with tomatoes, cucumber, red onion, feta cheese, and parsley or cilantro.
  2. Serve immediately with lemon wedges and Greek yogurt if desired.

Notes

Overcooking the chicken can lead to dryness; use a meat thermometer and cook until it reaches 165°F. Prepare toppings in advance for quicker assembly.
