Method
 

Preparation
  1. Gather all ingredients on your countertop to ensure readiness.
  2. Wash and dry the mixed greens thoroughly to maintain their crispness.
  3. Cut the peaches in half and remove the pit; brush them lightly with olive oil.
  4. Chop the walnuts for an added crunch and set aside.
Cooking
  1. Preheat your grill to medium heat (about 350°F or 175°C).
  2. Place the peach halves cut-side down on the grill; cook for 3-4 minutes until grill marks appear.
  3. Flip them over and grill for an additional 2-3 minutes until soft.
  4. Meanwhile, in a large bowl, combine mixed greens, feta, and walnuts.
  5. Once peaches are done, slice them into wedges and add to the salad mix.
Serving
  1. Drizzle olive oil and balsamic vinegar over the salad.
  2. Season with salt and pepper to taste, tossing gently to combine.
  3. Serve immediately, garnished with extra walnuts if desired.

Notes

This salad is excellent for meal prep, store components separate and add dressing just before serving. Can substitute feta with goat cheese or add spices for heat.
