Preparation
- Gather all ingredients on your countertop to ensure readiness.
- Wash and dry the mixed greens thoroughly to maintain their crispness.
- Cut the peaches in half and remove the pit; brush them lightly with olive oil.
- Chop the walnuts for an added crunch and set aside.
Cooking
- Preheat your grill to medium heat (about 350°F or 175°C).
- Place the peach halves cut-side down on the grill; cook for 3-4 minutes until grill marks appear.
- Flip them over and grill for an additional 2-3 minutes until soft.
- Meanwhile, in a large bowl, combine mixed greens, feta, and walnuts.
- Once peaches are done, slice them into wedges and add to the salad mix.
Serving
- Drizzle olive oil and balsamic vinegar over the salad.
- Season with salt and pepper to taste, tossing gently to combine.
- Serve immediately, garnished with extra walnuts if desired.
