Ingredients

Pizza Dough
  • 1 lb 1 ball pizza dough (1 lb to 1.25 lb) Whole-grain dough enhances nutritional value.
  • All-purpose flour and/or cornmeal For dusting to prevent sticking.
Pizza Toppings
  • ½ cup basil pesto Adds a burst of flavor and freshness.
  • 1 large tomato, sliced Fresh produce that brings juiciness and color.
  • 4 ounces shredded Fontina cheese A tasty melting cheese that enhances texture.

Method

Preparation
  1. Preheat the grill: Set your grill to medium heat, ensuring it’s ready for cooking.
  2. Prepare the dough: On a lightly floured surface, roll the pizza dough out to a diameter of 15 to 16 inches.
  3. Transfer and dust: Sprinkle flour or cornmeal on a large un-rimmed baking sheet or pizza peel, and place the rolled-out dough on it.
Grilling
  1. Grill the crust: Clean the grill grate and oil it. Slide the dough off the baking sheet onto the preheated grill. Cook for 2 to 3 minutes until the bottom is crisped and firm.
  2. Add toppings: Carefully flip the dough using tongs. Spread the basil pesto evenly over the crust, then top with sliced tomatoes and shredded cheese.
  3. Cover and finish: Close the grill lid and cook for an additional 5 to 7 minutes or until the cheese has melted and the bottom of the crust is golden and crispy.

Notes

Ensure your grill is preheated to avoid soggy crust and keep the toppings minimal to maintain crust integrity. Experiment with additional toppings like grilled vegetables or cooked chicken for added variety.
