Preparation
  1. Preheat your grill to medium-high heat.
  2. Cut the pineapple into rings or wedges, removing the tough core.
  3. In a bowl, mix brown sugar, cinnamon, and vanilla extract until well combined.
  4. Brush the pineapple pieces lightly with olive oil, then coat them with the sugar mixture.
Grilling
  1. Place the pineapple on the grill and cook for about 3-4 minutes on each side until golden grill marks appear and the sugar caramelizes.

Notes

To serve, try drizzling honey over the grilled pineapple or adding a scoop of ice cream. Store leftovers in an airtight container in the refrigerator for 3-4 days. Can be frozen for up to three months.
