Ingredients

Glaze Ingredients
  • 4 tablespoons melted butter Adds richness; can substitute with coconut oil for a dairy-free option.
  • 4 tablespoons raw sugar (or brown sugar) Natural sweetness; for a healthier option, substitute with honey or agave nectar.
  • 1 tablespoon lemon juice (or lime juice) Brightens flavor; choose lime for a tropical twist.
  • ¾ teaspoon ground cinnamon Offers warmth; can be substituted with nutmeg for a different flavor profile.
  • ¼ teaspoon cayenne pepper Provides a subtle kick; adjust to taste or omit if preferred.
  • teaspoon sea salt Enhances overall flavors; use Himalayan salt as an alternative.
Pineapple
  • 1 whole pineapple (peeled and cut into ¾ inch slices) The star ingredient; ensure it’s ripe for the best sweetness.

Method

Preparation
  1. In a small bowl, add the melted butter, raw sugar, lemon juice, ground cinnamon, cayenne pepper, and sea salt. Mix well until fully combined and set aside.
  2. Pour the prepared glaze over the pineapple slices, ensuring both sides are coated well. Allow it to rest for 15 minutes to enhance the flavors.
Grilling
  1. Heat a cast iron grill pan over medium heat (or an outdoor grill). Coat the pan with a little oil or cooking spray to prevent sticking.
  2. Grill the pineapple slices for 4-5 minutes on each side, basting with the remaining glaze. You’ll know they’re ready when they are golden and caramelized on both sides.
Serving
  1. Remove the pineapple from the grill pan and serve warm, either on its own or as a delightful side dish to your main course.

Notes

For an added dimension, try adding a scoop of vanilla ice cream on top when serving. Pair grilled pineapple with savory dishes like pork or chicken for a stunning contrast. Experiment with spices in the glaze; a pinch of ginger can add depth.
