Preparation
- Drain thawed spinach in a large bowl and remove excess liquid. Coarsely chop spinach and return it to the bowl.
- Mix together softened cream cheese, sour cream, and mayonnaise until smooth.
- Add garlic, onion powder, paprika, salt, and pepper to the mixture and stir until well combined.
- Cut jalapenos in half lengthwise and remove seeds and ribs to reduce heat.
Cooking
- Preheat grill to medium heat (about 350°F).
- Fill each halved jalapeno with the spinach dip mixture using a spoon.
- Sprinkle shredded cheese on top of each stuffed jalapeno.
- Grill stuffed jalapenos for 12-15 minutes until the peppers have softened.
Serving
- Remove from the grill and sprinkle with chopped parsley before serving.
- Serve hot and enjoy.
Notes
Ensure spinach is thoroughly drained to avoid a soggy filling. Experiment with different cheeses for added flavor.
