Ingredients
  

For the Spinach Dip Filling
  • 1 package frozen spinach Thawed and drained
  • 8 oz cream cheese Softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 cloves minced garlic
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
For the Jalapenos
  • 12 pieces jalapenos Halved and seeded
  • 1 cup shredded cheddar cheese For topping
  • 1/4 cup chopped fresh parsley For garnish

Method
 

Preparation
  1. Drain thawed spinach in a large bowl and remove excess liquid. Coarsely chop spinach and return it to the bowl.
  2. Mix together softened cream cheese, sour cream, and mayonnaise until smooth.
  3. Add garlic, onion powder, paprika, salt, and pepper to the mixture and stir until well combined.
  4. Cut jalapenos in half lengthwise and remove seeds and ribs to reduce heat.
Cooking
  1. Preheat grill to medium heat (about 350°F).
  2. Fill each halved jalapeno with the spinach dip mixture using a spoon.
  3. Sprinkle shredded cheese on top of each stuffed jalapeno.
  4. Grill stuffed jalapenos for 12-15 minutes until the peppers have softened.
Serving
  1. Remove from the grill and sprinkle with chopped parsley before serving.
  2. Serve hot and enjoy.

Notes

Ensure spinach is thoroughly drained to avoid a soggy filling. Experiment with different cheeses for added flavor.
