Preparation

- In a large bowl or zip-top bag, combine zucchini, yellow squash, red bell pepper, olive oil, kosher salt, and black pepper; toss to coat evenly.
Grilling
- Place the seasoned vegetables directly on the grill grates and grill for 5 to 7 minutes, flipping as needed, until tender and charred.
Making the Dipping Sauce
- In a medium bowl, mix together yellow mustard, honey, smoked paprika, creole seasoning, and optional salt. Whisk to combine and adjust seasoning as needed.
Serving
- Serve the grilled vegetables immediately with the honey mustard dipping sauce.
