For the Honey Mustard Dipping Sauce
  • 1 4 classic yellow mustard Base for the dipping sauce.
  • 2 tablespoons honey Provides sweetness.
  • 1 teaspoon smoked paprika Infuses smokiness.
  • 1 teaspoon creole seasoning Adds spice.
  • to taste kosher salt (optional) Enhances flavors further.

Method
 

Preparation
  1. Preheat the grill to medium-high, around 400-450°F (204-232°C).
  2. In a large bowl or zip-top bag, combine zucchini, yellow squash, red bell pepper, olive oil, kosher salt, and black pepper; toss to coat evenly.
Grilling
  1. Place the seasoned vegetables directly on the grill grates and grill for 5 to 7 minutes, flipping as needed, until tender and charred.
Making the Dipping Sauce
  1. In a medium bowl, mix together yellow mustard, honey, smoked paprika, creole seasoning, and optional salt. Whisk to combine and adjust seasoning as needed.
Serving
  1. Serve the grilled vegetables immediately with the honey mustard dipping sauce.
