White Sauce Ingredients
  • 2 tablespoons butter Serves as the base for the homemade white sauce.

Method
 

Preparation
  1. Preheat the oven to 350°F (180°C) and lightly grease a deep baking dish.
  2. Slice the zucchini lengthwise and grill them on a pan grill or BBQ until tender and slightly charred.
Make the White Sauce
  1. In a small pot over medium heat, melt the butter, then add flour and salt. Whisk together until well combined.
  2. Gradually add the milk while whisking, until the mixture thickens. Remove from heat and let cool.
Mix the Filling
  1. In a medium bowl, combine the tuna, bread crumbs, mozzarella, egg, Parmesan, olive oil, salt, black pepper, and parsley, mixing until fully incorporated.
Assemble the Lasagna
  1. Drizzle the baking dish with olive oil and layer it with grilled zucchini, one-third of the tuna mixture, and half of the white sauce.
  2. Repeat this process with another layer of grilled zucchini, one-third of the tuna mixture, and the remaining white sauce.
  3. Finish with a final layer of grilled zucchini and the rest of the tuna mixture. Sprinkle the top with Parmesan cheese.
Bake the Lasagna
  1. Place the assembled dish in the oven and bake for approximately 20-25 minutes until bubbly and golden.
  2. Let it sit for 5 minutes before serving.

Notes

For added smokiness, sprinkle a bit of smoked paprika into the filling mixture. Allow the lasagna to rest after baking for enhanced texture.
