Preparation
- Preheat the oven to 350°F (180°C) and lightly grease a deep baking dish.
- Slice the zucchini lengthwise and grill them on a pan grill or BBQ until tender and slightly charred.
Make the White Sauce
- In a small pot over medium heat, melt the butter, then add flour and salt. Whisk together until well combined.
- Gradually add the milk while whisking, until the mixture thickens. Remove from heat and let cool.
Mix the Filling
- In a medium bowl, combine the tuna, bread crumbs, mozzarella, egg, Parmesan, olive oil, salt, black pepper, and parsley, mixing until fully incorporated.
Assemble the Lasagna
- Drizzle the baking dish with olive oil and layer it with grilled zucchini, one-third of the tuna mixture, and half of the white sauce.
- Repeat this process with another layer of grilled zucchini, one-third of the tuna mixture, and the remaining white sauce.
- Finish with a final layer of grilled zucchini and the rest of the tuna mixture. Sprinkle the top with Parmesan cheese.
Bake the Lasagna
- Place the assembled dish in the oven and bake for approximately 20-25 minutes until bubbly and golden.
- Let it sit for 5 minutes before serving.
Notes
For added smokiness, sprinkle a bit of smoked paprika into the filling mixture. Allow the lasagna to rest after baking for enhanced texture.
