Ingredients
  

  • 1 lb ground beef (85/15)
  • 2 cups cooked white rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14 oz)
  • 1/2 cup vegetable broth
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tbsp olive oil
  • to taste salt and pepper
  • optional shredded cheese or fresh herbs

Equipment

  • Large skillet for cooking the entire dish
  • Wooden spoon for breaking up beef and stirring

Method
 

  1. Heat olive oil in a large skillet. Sauté onion for 3 minutes.
  2. Add garlic and bell pepper. Cook until soft and fragrant.
  3. Stir in ground beef. Brown well until no longer pink.
  4. Mix in cumin, paprika, and garlic powder. Stir to coat beef.
  5. Add diced tomatoes and broth. Simmer 5–7 minutes.
  6. Fold in cooked rice. Heat through and adjust seasoning.

Notes

Use cooked rice to keep the texture perfect. Customize with any veggies or cheese you have on hand. Great for meal prep or freezing.
