- Grate onion finely and squeeze out a bit of moisture using a paper towel.
- Combine ground chicken, onion, egg, mustard, breadcrumbs, and seasonings in a bowl. Mix gently.
- Form 4 equal patties and chill for 10–15 minutes in the refrigerator.
- Heat olive oil in a skillet over medium heat. Cook burgers 4–5 minutes per side until golden and 165°F inside.
- Let burgers rest for 2 minutes before serving. Build your burger or enjoy as-is!
