  • 1 lb Ground Turkey Lean protein; substitute with ground chicken or beef if desired.
  • 2 medium Sweet Potatoes Complex carbohydrates; yams or butternut squash are good alternatives.
  • 2 tbsp Olive Oil Healthy fat; coconut or avocado oil work as well.
  • 3 cloves Garlic Flavor enhancer; fresh garlic or garlic powder are fine substitutes.
  • 1 medium Onion Adds sweetness; shallots can be used for a different flavor profile.
  • 1 medium Yellow Bell Pepper Sweetness and crunch; any bell pepper will do.
  • 1 tbsp Red Chili Flakes Spice element; get creative with your preferred hot spice.
  • to taste Salt and Pepper Essential seasoning; kosher salt and freshly cracked black pepper enhance flavor.
  • 1 cup Shredded Mozzarella Cheese Creamy topping; replace with your favorite cheese or omit for a dairy-free version.
  • 1/4 cup Chopped Parsley Garnish; use scallions or cilantro for variation.

Method
 

Cooking
  1. In a cast iron skillet, heat the olive oil over medium-high heat.
  2. Add the ground turkey and garlic. Use a wooden spoon to break up the turkey as it cooks. Stir occasionally, and cook for about 5 minutes.
  3. Add the onions and yellow peppers, and cook until the onions are soft.
  4. Add the sweet potato, red chili flakes, salt, and pepper.
  5. Cover the skillet, and cook until the sweet potatoes are tender. Don’t forget to stir occasionally. If necessary, add more olive oil or a little bit of water to cook the sweet potatoes faster.
  6. While the sweet potatoes are cooking, preheat the oven to 400ºF.
  7. When the sweet potatoes are tender, add the shredded mozzarella cheese, and put the skillet in the oven to melt the cheese.
  8. When the cheese melts, remove from the oven, and garnish with parsley.

Notes

Serve warm, garnished with fresh parsley or green onions. Store leftovers in an airtight container in the refrigerator for up to three days. Can be frozen for up to three months.
