  • 2 tbsp Vegetable Oil For sautéing; olive oil is a great alternative.
  • 1 cup Rice The bed for your bowl; quinoa or cauliflower rice make excellent substitutes.
  • 1 cup Broccoli Florets Fresh and vibrant; frozen options save prep time.
  • 1 medium Red Bell Pepper Sliced thinly.
  • 1 medium Carrot Julienned.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
For the Teriyaki Sauce
  • 1/4 cup Soy Sauce Use low-sodium for a healthier option.
  • 1 tbsp Honey Sweetens the sauce; maple syrup works as a vegan substitute.
  • 1 tbsp Rice Vinegar Balancing the flavors.
  • 1 tbsp Fresh Ginger Grated; ground ginger will suffice if fresh isn’t handy.
  • 1 tbsp Cornstarch Thickens the sauce; arrowroot starch works if preferred.

Method
 

Preparation
  1. Cook the rice according to the package instructions and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat.
  3. Add the finely chopped onion and minced garlic, sautéing until the onions become translucent.
Cooking
  1. Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  2. Stir in the broccoli, sliced red bell pepper, and julienned carrot. Cook until the vegetables are tender-crisp.
  3. In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, and sesame oil.
  4. Mix cornstarch with water to create a slurry, then add to the soy sauce mixture.
  5. Pour the sauce over the turkey and vegetable mixture in the skillet. Stir well to coat everything evenly.
  6. Cook for an additional 2-3 minutes, until the sauce thickens and everything is heated through.
  7. Serve the turkey and vegetable mixture over a bed of cooked rice.
  8. Garnish with sliced green onions and sesame seeds before serving.

Notes

Marinate the turkey in the teriyaki sauce for enhanced flavor. Store leftovers in an airtight container for up to four days. Freezable for later use.
