Ingredients

Main Ingredients
  • 1 lb ground turkey Lean and packed with protein.
  • 2 cups short pasta Any shape; whole grain or gluten-free options can be used.
  • 2 cups mixed vegetables (e.g., bell peppers, zucchini, carrots) Fresh or frozen; include family favorites.
  • 1 can (15 oz) tomato sauce Low-sodium options are recommended.
  • 1 tablespoon olive oil For sautéing; a source of healthy fats.
  • 1 teaspoon garlic powder For easy flavor without chopping.
  • to taste salt and pepper Essential for enhancing all flavors.
  • for serving Parmesan cheese Optional; adds richness.

Method

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions, usually around 8-10 minutes, until al dente. Drain and set aside.
Sautéing the Turkey
  1. In a large skillet, heat olive oil over medium heat. Add the ground turkey and cook for about 5-7 minutes until browned and cooked through, breaking it apart as it cooks until it reaches an internal temperature of 165°F.
Adding Vegetables
  1. Stir in the mixed vegetables and cook until tender, about 3-4 minutes.
Mixing Sauce
  1. Add the tomato sauce, garlic powder, salt, and pepper. Stir to combine and let it simmer for about 5 minutes.
Combining Pasta and Sauce
  1. Mix in the cooked pasta until well combined. Serve warm, topped with Parmesan cheese if desired.

Notes

For extra flavor, consider adding fresh herbs like basil or oregano. If prepping ahead, store the pasta and sauce separately to avoid mushiness when reheating. This dish can also be doubled for leftovers, as it freezes very well.
