Preparation
- Combine all ingredients in a large bowl, mixing by hand or using a stand mixer until you have a soft, smooth dough. You may need an extra 1/4 cup of flour to achieve the right consistency based on humidity and temperature.
- Cover the bowl with a cloth and let the dough rise for 1 hour until doubled in size.
- Divide the dough into 8 equal pieces—approximately 96 grams each—and shape each one into a flattened ball.
- Place them on greased baking sheets or parchment paper, cover with greased plastic, and let rise for another 30 to 40 minutes.
Baking
- Brush the buns with an egg wash and sprinkle with sesame seeds, if desired.
- Preheat your oven to 375°F and bake the buns for 12 to 15 minutes until golden brown.
Notes
For extra softness, place a pan of water in the oven while baking. Leftover buns can be toasted for breakfast sandwiches.
