Ingredients
  

Main ingredients
  • 1 cup water (110°F) Avoid boiling water as it can kill the yeast.
  • 2 tablespoons melted butter You can use olive oil for a lighter option.
  • 1 large egg (room temperature) A flaxseed egg can work as a vegan alternative.
  • 3 1/4 cups all-purpose flour (around 13 3/4 ounces) Bread flour can be used for a chewier texture.
  • 1/4 cup sugar Can be substituted with honey or agave.
  • 1 teaspoon salt Sea salt or kosher salt can be used.
  • 1 tablespoon instant yeast Active dry yeast can also be used but needs to be activated first.
  • 1 egg + 1 tablespoon water for egg wash Gives the buns a shiny finish.
  • Sesame seeds (optional) Can substitute with poppy seeds or onion flakes.

Method
 

Preparation
  1. Combine all ingredients in a large bowl, mixing by hand or using a stand mixer until you have a soft, smooth dough. You may need an extra 1/4 cup of flour to achieve the right consistency based on humidity and temperature.
  2. Cover the bowl with a cloth and let the dough rise for 1 hour until doubled in size.
  3. Divide the dough into 8 equal pieces—approximately 96 grams each—and shape each one into a flattened ball.
  4. Place them on greased baking sheets or parchment paper, cover with greased plastic, and let rise for another 30 to 40 minutes.
Baking
  1. Brush the buns with an egg wash and sprinkle with sesame seeds, if desired.
  2. Preheat your oven to 375°F and bake the buns for 12 to 15 minutes until golden brown.

Notes

For extra softness, place a pan of water in the oven while baking. Leftover buns can be toasted for breakfast sandwiches.
