Preparation
- Preheat your oven to 350°F.
- In a large bowl, cream the softened butter and sugar together using a mixer until light and fluffy.
- Add the eggs, one at a time, beating well after each.
- Stir in the mashed banana and crushed pineapple (juice included).
- In a separate medium bowl, sift together the flour, baking powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the shredded coconut.
- Pour the batter into a greased 9x5 loaf pan.
Baking
- Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Notes
Let the bread cool in the pan for 10 minutes before transferring to a wire rack. To elevate the loaf, drizzle honey or a sprinkle of coarse sea salt on top before baking for an additional layer of flavor.
