- In another bowl, whisk together the honey (or maple syrup), eggs, and applesauce until smooth.
- Add the grated carrots to the wet mixture and stir until combined thoroughly.
- Gradually fold the wet ingredients into the dry ingredients until just mixed; avoid over-mixing.
- If using, gently fold in walnuts or raisins.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
- Bake for 18-20 minutes or until a toothpick comes out clean.
