Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

  3. In another bowl, whisk together the honey (or maple syrup), eggs, and applesauce until smooth.
  4. Add the grated carrots to the wet mixture and stir until combined thoroughly.
  5. Gradually fold the wet ingredients into the dry ingredients until just mixed; avoid over-mixing.
  6. If using, gently fold in walnuts or raisins.
