- Scoop out some of the avocados to make space for the filling. Slice the avocados in half and remove the pit. Carefully scoop out a bit of the flesh to create more room, then dice the scooped avocado and place it into a bowl.
- Add in the shredded chicken, onion, Greek yogurt, parsley, lemon juice, and Dijon. Stir all the ingredients together until well combined, and taste to adjust the seasoning if necessary.
- Divide the chicken salad among your avocado halves. Generously fill each avocado half with the chicken salad mixture, ensuring an even distribution.
- Garnish with parsley and freshly ground black pepper. If you like a bit of spice, sprinkle on some red pepper flakes for an extra kick.
