  • 2 large Eggs Substitute with flax or chia eggs for vegan option.
  • 1/2 cup Maple Syrup or Honey Agave syrup can be used as substitute.
  • 1/4 cup Melted Coconut Oil or Unsalted Butter Applesauce can be used for lower fat option.
  • 1 tsp Vanilla Extract Almond extract also works beautifully.
  • 1 cup Oat Flour Substitute with almond flour if necessary.
  • 1/2 cup Unsweetened Cocoa Powder Opt for dark cocoa for a healthier touch.
  • 1/2 cup Chocolate Protein Powder Vanilla protein can be substituted.
  • 1 tsp Baking Powder Make sure it’s fresh for optimal rise.
  • 1 pinch Salt Enhances flavor.
  • 1/2 cup Dark Chocolate Chips Can swap in dairy-free chocolate for a vegan variant.
  • 1/2 cup Chopped Walnuts or Pecans (optional) Omit if nuts aren't your thing.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
  2. Blend cottage cheese until completely smooth.
  3. In a mixing bowl, whisk cottage cheese, eggs, maple syrup, melted oil, and vanilla until smooth.
  4. In a separate bowl, whisk oat flour, cocoa powder, protein powder, baking powder, and salt.
  5. Combine dry ingredients into the wet mixture and stir until just mixed.
  6. Fold in chocolate chips and nuts (if using).
  7. Pour batter into the prepared pan and top with extra chocolate chips.
  8. Bake for 22–26 minutes until edges are set and the center is still moist.
  9. Cool completely before slicing. For best texture, refrigerate for 30 minutes before serving.

Notes

Use a toothpick to test for doneness—if it comes out with moist crumbs, it’s perfect! Consider adding a pinch of espresso powder to amplify the chocolate flavor. Store the brownies in an airtight container for maximum freshness.
