Preparation
- Preheat the oven to 360°F (180°C) while preparing the chicken.
- In a small bowl, combine lemon pepper seasoning, garlic powder (if using), and salt. Set aside.
- Place the chicken breasts in a baking dish. Rub all over with olive oil and drizzle with fresh lemon juice.
- Generously rub the lemon pepper mixture on all sides of the chicken breasts.
Cooking
- Place the dish in the oven and bake for 25-30 minutes, or until the chicken is no longer pink inside but still tender.
- Spoon the sauce over the chicken and serve immediately with fresh chopped parsley and lemon wedges.
Notes
Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F. Allow the chicken to rest before serving to retain juices. Experiment with herbs such as thyme or rosemary for added flavor.
