Preparation
- Preheat the oven according to the cake mix instructions. Grease and flour a 9×13 inch baking dish.
- In a mixing bowl, combine the cake mix, water, and eggs. Mix until smooth and free of lumps.
- Pour the batter into the prepared baking dish and bake according to the package instructions until golden brown. Allow to cool completely.
Topping
- Once cooled, poke holes in the top of the cake with a fork.
- Mix the drained crushed pineapple, coconut flakes, and nuts in a separate bowl. Spread this mixture over the cake.
- In another bowl, beat together the cream cheese and powdered sugar until smooth, then gently fold in the whipped topping.
- Spread the cream cheese mixture over the cake. Chill for a few hours before serving.
Notes
For best results, serve chilled. Can be made a day ahead to allow flavors to meld. For storage, keep covered in the refrigerator for up to five days or freeze individual slices in airtight containers.
