Ingredients
  

For the Cake
  • 1 box cake mix Choose white or yellow for best results.
  • 1 cup water Keeps the cake moist and fluffy.
  • 3 large eggs Essential for binding.
For the Topping
  • 1 20 oz can crushed pineapple, drained Adds moisture and sweetness.
  • 1 cup sweetened coconut flakes Unsweetened can be used for less sweetness.
  • 1 cup chopped pecans or walnuts Optional; skip for a nut-free version.
For the Frosting
  • 1 8 oz cream cheese, softened Creamy base for the frosting.
  • 1 cup powdered sugar Sweetens the cream cheese.
  • 1 8 oz container of whipped topping Lightens the frosting.

Method
 

Preparation
  1. Preheat the oven according to the cake mix instructions. Grease and flour a 9×13 inch baking dish.
  2. In a mixing bowl, combine the cake mix, water, and eggs. Mix until smooth and free of lumps.
  3. Pour the batter into the prepared baking dish and bake according to the package instructions until golden brown. Allow to cool completely.
Topping
  1. Once cooled, poke holes in the top of the cake with a fork.
  2. Mix the drained crushed pineapple, coconut flakes, and nuts in a separate bowl. Spread this mixture over the cake.
  3. In another bowl, beat together the cream cheese and powdered sugar until smooth, then gently fold in the whipped topping.
  4. Spread the cream cheese mixture over the cake. Chill for a few hours before serving.

Notes

For best results, serve chilled. Can be made a day ahead to allow flavors to meld. For storage, keep covered in the refrigerator for up to five days or freeze individual slices in airtight containers.
