Preparation
- Preheat your oven to 350°F (175°C).
- Grease a baking dish or line it with parchment paper for easy removal.
- In a blender or food processor, combine the cottage cheese, cocoa powder, and eggs until smooth.
Cooking
- Add the oats, honey, baking powder, and vanilla extract to the mixture.
- Blend until fully combined and the mixture is thick.
- Pour the batter into the prepared baking dish, smoothing out evenly.
- Bake in the oven for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
Serving
- Once baked, allow the brownies to cool in the pan for about 10 minutes.
- Lift them out using the parchment paper (if used) and place on a wire rack to cool completely.
- Cut into squares and serve, or store for later.
Notes
Use low-fat cottage cheese for a lighter option. Mix until just combined to maintain a fudgy texture. Store in an airtight container to keep fresh longer. For added richness, drizzle with melted dark chocolate before serving.
