Preparation

  2. Chop the bell peppers and onion into small, even pieces.
  3. Rinse the spinach and let it dry.
  4. In a large bowl, crack the eggs and whisk them until well blended.
Cooking
  1. Heat a skillet over medium heat and add a small amount of cooking spray or oil.
  2. Add the chopped onions and bell peppers, sautéing until softened, approximately 5 minutes.
  3. Stir in the spinach until wilted, about 2 minutes.
  4. Pour the whisked eggs into the skillet, scrambling them until fully cooked.

Assembly
  1. Place a generous amount of the egg mixture onto the center of each tortilla.
