Preparation
  1. In a bowl, whisk together the eggs, cottage cheese, salt, and black pepper.
Cooking
  1. Heat a nonstick skillet over medium-low heat and spray with oil.
  2. Pour the egg mixture into the skillet and reduce the heat to low.
  3. Stir continuously with a silicone spatula, keeping the eggs moving until soft and just beginning to set, about 2 minutes.
  4. Remove from the pan immediately to prevent overcooking.
